What I intend is...at Mediatemple.net with their (gs) Grid-Service plan, they only allow 1,000 GPUs and if you go over (in lieu of of getting banned) you have to pay more

For Nameservers/DNS , yes you can either use your present DNS provider and set upon them accent yourdomain.com and the hostname vps.yourdomain.com to your VPS IP here, or you can plainly setup the DNS here on your VPS and start using it. The steps for that would be to first note two Nameservers like ns1.yourdomain.com and ns2.yourdomain.com at your registrar against the two additional IPs close by on the VPS , once they are registered you can start to use them for any domains that you will proprietor on your vps.
