When setting up a dedicated mail server, how should I set up my DNS settings on the primary and new server?

As regards the mx record, that is already being managed by a 3rd party name service provider. It will not have to change since we are not getting a new exterior IP address. A representative from that company, though, said that some DNS settings will have to change on my end to make satisfied that mail is routed properly to the new server instead of the old (primary) server where we are currently set up using singular mail server software. (We are transitioning from MailEnable to MS Exchange Server 2007).

Can anyone offer any advice anent these DNS settings? Or do you have any other useful tips to help me have a smoother transition? (I didn't introduce our first mail server, and this is my first time installing Exchange Server).

We are a cheap non-profit with only 6 staff and no dedicated IT person. Exchange has been a thorn in our side and is maxing out server space. We have moved our email and calendars to Google and no longer use Exchange for email, calendars or contacts. What would be the ramifications of removing Exchange? My spectre is that there are little tentacles that would effect networking.
